Kale-Lentil-Curry
Vegan

Ingredients for 4
250g Carrots
300g Kale
150g Red Lentils
1 Can Coconut milk
100g Cashew nuts
50g Raisins
2 Onions
2-3 Garlic cloves
1-2 Tbsp Lemon juice
1 Tbsp yellow Curry paste
Rapeseed Oil
500-600ml Vegetable Broth
Black Pepper or Chili flakes
Salt
Prepare
♥ Peel and slice 250g carrots
♥ Finely chop 2 onions and 2-3 cloves of garlic
♥ Roughly chop and roast 100g cashew nuts
♥ Wash 150g lentils in warm water
Cook
♥ Sauté onion and garlic cloves in oil
♥ Stir in curry paste over medium heat
♥ Bring to the boil with 500-600g vegetable stock, lentils and carrots and simmer for 10 minutes
♥ Add 300g kale, 1 can of coconut milk and 50g raisins and simmer for 15 minutes
♥ Season the curry with pepper/chili, salt and 1-2 tsp lemon juice
♥ Sprinkle curry with cashew nuts
