Italian Pizza

Self made dough

Ingredients for 3 pizza

1kg flour (high in proteins)
4g yeast
10g sugar
20ml olive oil
20g salt

Day 1 (18:00)

♥  Mix 800g flour, 500ml cold water and 2g yeast  (the dough will be quite fluid)

♥  Cover it with a humid kitchen towel and place it in a place with no direct light

 

Day 2 (10:00)

♥  Mix the dough with 200g flour

♥  Add 20ml olive oil and mix it

♥  Add 10g sugar and 2g yeast and mix

♥  Add 20g salt and mix it

♥  Add more flour until the dough doesn’t stick to your hand

♥  Cover it with a humid kitchen towel and place it in a place with no direct light

 

Day 2 (14:00)

♥ Put some olive oil on a baking tray

♥ Put the tray in the oven with the light on or cover it with a humid kitchen towel and place it in a place with no direct light

 

 

 Day 2 (18:00)

♥ Preheat the oven on 250°C

♥ Roll out the dough on 3 trays

♥ Pizza with tomatoes: Bake the dough for only 10 mins with the tomato sauce, add the toppings and bake for another 10-15 mins

♥ Pizza bianca/white Pizza: Bake the dough for only 10 mins with only some olive oil, add mozzarella and other ingredients and bake for another 10-15mins

♥  Cover it with a humid kitchen towel and place it in a place with no direct light

Day 2 (10:00)

♥  Mix the dough with 200g flour

♥  Add 20ml olive oil and mix it

♥  Add 10g sugar and 2g yeast and mix

♥  Add 20g salt and mix it

♥  Add more flour until the dough doesn’t stick to your hand

♥  Cover it with a humid kitchen towel and place it in a place with no direct light

 

Day 2 (14:00)

♥ Put some olive oil on a baking tray

♥ Put the tray in the oven with the three balls of dough and cover it with a humid kitchen towel

 

Day 2 (18:00)

♥ Preheat the oven on 250°C

♥ Roll out the dough on 3 trays

♥ Pizza with tomatoes: Bake the dough for only 10 mins with the tomato sauce, add the toppings and bake for another 10-15 mins

♥ Pizza bianca/white Pizza: Bake the dough for only 10 mins with only some olive oil, add mozzarella and other ingredients and bake for another 10-15mins
